Our Foodie Tribute To Valentine’s Day.

Happy Saint Valentine’s Day! Today is a day where all around the world people will offer the ones they love a token to show just how much they mean to them. It’s also known as the Feast of Saint Valentine, so our gift is a recipe that can be used to create a spectacular feast of your own.

The Chocolate Olive Oil Fig cake is seemingly a gift from the Gods (or Saint Valentine himself), it contains not one, but two foods that are known aphrodisiacs… Chocolate and figs, indulgence is its middle name. To make the cake you will need:

40grams good quality olive oil
60grams self-raising flour
30 grams coco powder
Pinch of salt
1 teaspoon baking soda
60grams sugar
1 large egg and 1 yolk.
½ teaspoon vanilla essence
Lemon Zest
5 fresh figs, quartered

Preheat the oven to 180C/ Gas mark 4. Brush a Yorkshire pudding tray with butter and dust with flour.
Whisk the sugar, eggs, vanilla and lemon zest until pale and fluffy.
Add the olive oil slowly until all has been combined.
Fold in the flour, baking powder, salt and coco powder into the olive oil mixture.
Divide the batter between the tray and bake for 10 mins, after this time add the figs on top of the cakes and bake for a further 10 mins or until you insert a butter knife and the end comes out clean.

If you want to be really fancy you could make a chocolate sauce to top the cake all you need to do is melt some dark chocolate, a little bit of butter and sugar in a pan and plonk on top. Finally carefully place the remaining figs on the cakes… All that’s left to do now is sit down, relax and enjoy your scrumptious creation.
